Bahons2, interesting take on the Spanish omelette! Our traditional recipe is much simpler but I must try yours! If you want the Spanish recipe, tell me and I´ll put it up. And yes! it must be eaten with bread to enhance its taste! (preferably something like a French stick, which is the closest to Spanish bread).

Hi Bahons2, Have you been using your Remoska oven or is it sitting an the back of the cupboard now? My OH has just purchased an “induction hob” mainly for use in France when we go over on holiday. But if the gas runs out with all the snow we are having I may need to use it in the house here in Edinburgh! My OH bought it in the John Lewis sale with his Xmas money…I had never seen one before., It is very clever as it cook quicker than a normal hob. I haven’t tried it yet, but OH has tried it out and thinks it may come in usful.
Anyone else used one before??? Love Val.

Hi all

Another variation I use with the omelette is to substitute couscous for the potato. Using a flavoured variety gives it an interesting taste and a different texture.

I have indeed been using the Remoska! As some of you will know, I live in France and a standard French built-in oven is quite small - smaller than a British one. It won’t take a turkey; will just about accommodate a capon, but there’s no room for anything else in with it, really.

So Xmas day I did all my roast potatoes, parsnips and carrots in it, with very little fat and they were ace.

I would recommend getting the bigger version if there’s more than one of you. I reckon the smaller one is only really suitable for a single person.

Tried ths recipe out tonight and it was a huge success with the family and soooooooooooo very quick.

PRAWN CURRY IN A HURRY

2 TBSP CURRY PASTE(mild or hot depending on your taste)
1 TBSP OIL
1 ONION FINELY SLICED
400G TIN CHOPPED TOMATOES
200G LARGE PRAWNS(defrosted) OR COOKED CHICKEN/BEEF/LAMB
2 CLOVES CRUSHED GARLIC
LARGE BUNCH CORIANDER LEAVES AND STALKS CHOPPED

Heat oil,fry onion and garlic over low heat for 4 mins,add curry paste and cook for 3 mins.
Stir in tomatoes and prawns/or meat and bring to simmer to heat through.
Season and add coriander just before serving.

    3 Leave hubby at home on his own.
    4 Make sure fridge and cupboards are full of nice ingredients.
    5 Cross fingers
    6 Take longer than necessary to return home.
    7 There you go, lovely meal made.
    Scotch Broth with Boiling Beef and Barley
    Casseroled Skirt steak with new potatos, spring greens, with
    root vegetables…all done in a flash. He even loaded
    up the dishwasher. Oh isn’t he is just fabulous!

RECIPE FOR BEEF BROTH AS REQUESTED ON OTHER THREAD.

I don’t have a “written down” recipe but this is how I make it…

You will need a piece of boiling beef.
Onions, carrots, swede ( turnip), leek,( you can add or delete any veg as you want to)
two tablespoons barley,
around a litre of water
a Knorr vegetable stock cube
lots of freshly ground black pepper, salt ( if not using stock cube)

First, fry onions until transparent, add diced vegetables,cook 5 mins
add water and boiling beef plus pepper salt and cube if desired.
Use a pressure cooker and it can be ready in 20 minutes.
If not cook until the barley is soft enough to eat.
Add more water if too thick and add more seasoning as desired.
Great on a cold day. Even better (some say) the following day.
Serve with some crusty bread.

Am completely new to this cooking lark (husband usually does it) but recently have wanted to try my hand at it.

This is a great thread and already have shopping list ready for tomorrow.

I wonder if anyone has a very easy (emphasis on easy) recipe for a main meal with nothing burny (as my son would say) ingredients for a meat loving husband and a son whose also wary of vegetables but will reluctantly give them a go.

Adele, I think I could help here but would need to know a bit more! Give us an idea the kind of food your husband already likes and how old your son is, and does it have to be meat, could it for instance be fish. Give us a few pointers to start with. I have numerous ideas but it really depends on what you normally like to eat. For instance do you want something as simple as a shepherd’s pie or more unusual?

Just come across this great thread, will read and take note of some of the recipes when I have more time.

Scottishlass - I have an induction hob, bought when we re-did our kitchen 18 months ago and I absolutely love it. Not only does it look good, it’s very easy to keep clean and so, so easy to control. The only downside was having to replace some of our pans. Unfortunately my beloved large jam making pan bought many years ago doesn’t work so I can only make jams, marmalades and chutney’s in small amounts and I was unable to cook a large ham this Christmas.

Adele - an easy way to add veg to meat dishes is to add grated carrot to mince if you are making a bolognaise sauce, or basis for Shepherd’s Pie. It went unnoticed for many years by my reluctant veg-eating son. Grated courgette worked too but didn’t quite get the same success with finely chopped cabbage! Not sure about the nutrient content as the veg are cooked longer than I would normally but it made me feel better!

Hi Adele, have you tried roasting different veg eg peppers, parsnips,carrots,sweet potatoes,butternut squash ? I sometimes make a mash of potatoes but also add in carrots or sweet potato too.

Got some more soup recipes,would love to love scotch broth but barley gives me the dry boak Val ! Think I was forcefed it as a child, bleurgh !

MRS DUNCAN’S LENTIL SOUP

a splash of oil in a large pot,saute 2 finely diced onions,
add 2 chopped carrots and 4 med potatoes,
1 n half kettle fulls of boiling water,
add 6 handfulls red lentils and 3 veg stock cubes.
simmer till all ingredients are cooked, usually let mine bubble away for a good hour.
liquidise and seaon too taste but lots of black pepper is nice.

This makes a quite a large pot of soup that keeps my family going for a couple of days, or we eat half and freeze the rest.

CARROT AND CORIANDER SOUP

2 OZ BUTTER
2 ONIONS SLICED
1LB CARROTS SLICED
1OZ DRIED LENTILS
2 PINTS CHICKEN STOCK
1 TABLESPOON GROUND CORIANDER
4 TABLESPOON SINGLE CREAM(OPTIONAL)

Melt butter and fry veg and lentils for 2-3 mins
add remaing ingredients except cream
cover and simmer for 40mins
liquidise and stir in cream if not on a diet…

ROASTED TOMATO AND RED PEPPER SOUP

6 MED RED PEPPERS HALVED AND DESEEDED
8 RIPE TOMATOES SKINNED AND HALVED
1 TSP SUGAR
2 TBSP OLIVE OIL
SALT AND PEPPER
1 MED ONION CHOPPED
1 GARLIC CLOVE CRUSHED
1 N HALF PINT VEG STOCK

preheat oven to 190 c

place red peppers skin side up in roasting tim,place tomatoes cut side up in same tin and drizzle with 1 tbsp olive oil and sprinkle with sugar a pinch of salt and black pepper,bake for an hour.
heat remaining oil,cook onion n garlic very gently for 15 mins in covered pot without colouring,add peppers and tomatoes and stock,bring to boil then cool little and liquidise.
garnich with fresh chopped basil if wanted.
this can be served warm in winter or chilled in summer.

Am on a dreaded diet at the mo so eating a lot of soup,any one else with a tried and tasty recipe to help me out(without barley tho …)

Watercress Soup

I mediun Onion
1 small potato
oil (or marg)
Bunch Watercress
Half pint milk
Half pint Veg stock ( can be cube)
salt and pepper
4 tablespoons cream ( if not on diet)

Chop onion and potato
Melt marg in pot and saute until onion transparent.
Add potato, waterscess, milk and stock.
Bring to boil then turn down heat and gently simmer for 15/20 minutes. Allow to cool slightly then blend in liquider( or similar). Return pain, stir in cream (if having any) and gently heat.

Green Pea soup.

8oz green split peas
2 pints water
1 large onion
20z marg or butter
2 vegetable stock cubes
salt and pepper

Soak the peas overnight if you have time, washing them first.

Chop the onion. Melt marg/butter in pan and saute until transparet. Add water and stock cubes. Simmer for about an hour, season to taste, blend with braun tpye hand blender (or use liquidizer).

The split peas take much longer to cook if not soaked first but you can speed things up in a pressure cooker…if you have one. But works well in normal pot…just longer

Curried parsnip soup.

2 large parsnips
1 large onion
curry powder or Patakas curry paste ( comes in various flavours but is salty so watch out. I use Balti)

Chop veg and cook in 1 tablespoon oil
Add 2 vegatable stock cubes and 2 pints of water and curry powder
Cook until parsnips are tender
Liquidise
Add small carton of cream if not on diet!

Sandra: I tried the lemon pudding. It was a great success thanks. I’ve even had requests for the recipe.

Scottishlass: I’m looking for meat or fish dishes ideally. Something nutritious and filling. Traditional dishes such as shepards pie would be wonderful. Son is nearly 5 and loves shellfish and likes chicken but will only eat potatoes, carrots and peas (veg wise). Husband loves red meat but also enjoys vegetarian dishes.

Also does anyone have any great party food ideas for my son’s upcoming birthday party, I don’t really want it all to be shop bought.

Hi Adele,glad the pudd went down well.As for party food,when my two were younger we did a grapefruit with face drawn on with tubes of icing sugar and stuck cocktail sticks in it then put chipolata sausages on the sicks so it looked like spines on a hedgehog. Also did similar with a cucumber except cut a mouth in it,couple of raisins for eyes and you have a crocodile,we put grapes and cheese on the sticks. I know it’s a bit of a waste but if you aren’t catering for too many you can make up the sandwiches and use star cutters or gingerbread men cutters to cut them out and make them a bit special. Buy shop fairycakes then put a good covering of icing on them and decorate with choc buttons or dolly mixtures.Used to try and be healthy and put out carrot and cucumber and pepper sticks and dip but they weren’t that popular,would always avoid the wotsits tho, always end up in the carpet !
This is my Mum’s recipe and it always went down well at parties and any other time.

GRANNY BROWNING’S TIFFIN

Line a deep baking tin with cling film.

3TBSP CASTER SUGAR
3TBSP COCOA
1LB DIGESTIVE BISCUITS
3TBSP SYRUP
8OZ MARG
4OZ RAISINS
COOKING CHOC TO COVER(400G)

Melt marg,sugar,syrup and cocoa.
Stir in crushed digestive biscuits and raisins.
Press into the tin.
Melt choc and pour over.
Chill,then cut into squares and watch it disappear.

Pint stock
4 pickled onions
Blitz…thats it and its really nice
